Vietnamese Corn Pudding with Coconut Sauce _ Che Bap

How to make Corn and Sweet Rice pudding serve with delicious coconut sauce.
Ingredients
- 5 large ears of sweet corn, thinly sliced.
- 6 cup of water
- 10 pandan leaves
- Cooked, drained, you will get about 4 cups of corn juice.
- Need 1 more cup of water
- 1/8 tsp pandan extract
- 1 cup = 220 gr sweet rice (aka glutinous rice or sticky rice)
- 1/2 cup + 1 Tbsp = 137 gr sugar
- 1/2 tsp = 3 gr kosher salt reduce the amount if using table salt.
- 1 Tbsp = 8 gr tapioca starch
- 1 Tbsp = 12 gr water
* Coconut sauce
- 2 Tbsp = 16 gr tapioca starch
- 1/3 cup = 87 gr sugar
- 1 tsp = 5 gr kosher salt, reduce the amount if using table salt.
- 1 tub vanilla sugar
- 1 can = 400 ml coconut cream
- 3/4 cup = 175 ml water
