Crispy Fried Shrimp and Sweet potato, Delicious Vietnamese Shrimp and Sweet Potato Fritter aka Banh Tom.
Ingredients for 5-6 servings
- 2 lbs = 900 gr large frozen peeled and deveined shrimps.
- Marinate shrimp, then keep cold in the refrigerator.
- 1/2 tsp = 2 gr kosher
- 2 tsp = 4 gr onion powder
- 2 Tbsp = 16 gr rice flour
- 1 1/2 lbs = 650 gr yam/ sweet potato
- 5 cup cold water
- 1 tsp kosher salt
- 1 Tbsp vinegar

* Mixture of flours
- 1 1/2 cup then removed 1 Tbsp = 160 gr rice flour
- 2/3 cup = 100 gr All purpose flour
- 1/2 cup + 1 Tbsp = 80 gr corn starch
- 2 Tbsp = 18 gr glutinous rice flour
- 1/2 tsp = 3 gr kosher salt
- 1/2 tsp = 1 gr turmeric powder
- 1 tsp = 5 gr sugar
- 1 1/2 tsp = 5 gr double acting baking powder.
- 2 cup cold water = 460 gr
- Vegetable oil for frying.
