Crispy Fried Cassava Sticks/ Banh Cay

Easy and delicious Crispy Fried Cassava Sticks. It's crispy crunchy on the outside but still soft on the inside. Carrot/ corn are sweet, with nice aroma of scallions/ curry powder, little spicy from the hot chili, all combined give it a perfect balance.
Ingredients for 18 fried cassava sticks
- 1 lb = 454gr grated frozen cassava (1 lb per package)
- 1 Tbsp = 9gr rice flour
- 1 Tbsp =9gr glutinous rice flour
- 2 Tbsp = 18gr all purpose flour
- 1 1/2 tsp = 7gr sugar
- 3/4 tsp = 3gr kosher salt (if regular table salt then 1/2 tsp)
- 1/2 tsp = 2gr double acting baking powder
- 1 1/2 tsp = 3gr curry powder
- 50gr shreded carrot
- 80gr frozen sweet corn
- 1 hot chilli
- 1 clove garlic
- 4 stalks scallion
- Vegetable oil for frying
