Grilled Banana wrapped in Sweet Rice - Chuối Nếp Nướng

Grilled Banana wrapped in Sweet Rice always serve with coconut sauce, delicious Vietnamese street food.
Ingredients
- 700 gr = 8 Asian bananas, soft ripe DO NOT USE BANANA IF IT NOT RIPE SOFT YET.
- Banana leaves, foil wrap
- 2 Tbsp toasted peanuts
- 1 Tbsp toasted sesame seed
* Soak rice
- 2 cup = 440 gr sweet rice (aka glutinous rice or sticky rice) washed well, then soak with 3 cup boiling water for 1 hour before cooking.
* Cook sweet rice with
- 1/4 tsp = 1 gr kosher salt
- 3/4 cup = 180 ml coconut milk
- 3/4 cup = 180 ml water
- 3 pandan leaves
- Add 1 Tbsp sugar to cooked rice, (add 2 Tbsp if you like it sweeter)
* Coconut sauce
- 1 can = 400 ml coconut cream
- 1 1/4 cup = 290 ml water
- 4 1/2 Tbsp = 70 gr sugar (use 80 gr if like it sweeter)
- 1 tsp = 5,6 gr kosher salt (reduce the amount if using table salt)
- 2 Tbsp = 24 gr tapioca pearls
- 1 Tbsp = 8 gr tapioca starch
- 1 small tub vanilla sugar
