Ingredients
Cake batter
- 2 1/3 cup rice flour 270 gr
- 1/3 cup glutinous rice flour 30 gr
- 1/3 cup tapioca starch 30 gr
- 2 tubs vanilla sugar or 1 tsp vanilla extract
Coconut sugar
- 1/2 cup + 1 1/2 Tbsp sugar 150 gr
- 1 cup coconut milk 225 gr
- 1/2 tsp kosher salt 2,3 gr
Egg & water
- 1 med egg 60 gr with shell
- 2/3 cup room temperature water 150 gr

Instructions
- * Please measure your flours correctly. Make sure to fluff the flour before measure, by scoop the flour with a spoon then add to your measuring cup, flatten it with a knife. Use the scale to weigh your flour will be the best method. * Veg. oil for deep fry, about 2,3 cm deep of oil in any size of wok that you use. * Please follow my step by step process and do not make any changes. - 240 gr mung beans 1 cup + 2 Tbsp
- 3.1/2 cup boiling water 820 ml
- 1 cup boiling water 240 ml
- 1/3 cup sugar 85 gr
- 1/2 tsp kosher salt 2 gr
- 1 small tub vanilla sugar
- 2/3 cup sweetened coconut flakes 75 gr
- 2 Tbsp veg oil 22 gr
Dough
- 1 bag/16 oz glutinous rice flour 465 gr
- 3 Tbsp corn starch 25 gr
- 1/3 cup rice flour 45 gr
- 2 tsp double acting baking powder 7,8 gr
- 150 gr cooked potato
- 215 gr sugar 1/2 cup+1/3 cup
- 1 tsp kosher salt 5 gr
- 1 small tub vanilla sugar
- 3 Tbsp veg oil 33 gr
- 1/2 cup boiling water 125 ml
- 1 cup room temperature water, not use all of it. 240 ml
- 2/3 cup sesame seeds 120 gr
- veg oil for deep fry 1 inch of oil to any pan that you may use.

Bánh Đúc Tôm Thịt, đặc sản Miền Tây sông nước. Vietnamese steamed coconut rice cake is so delicious, it's one of my childhood favorite food. It has a wonderful coconut flavor with refreshing topping. It is beloved by young and old and very popular in Southern Vietnam.

Ingredients
Coconut Rice Cake
- 2.1/4 cup rice flour = 250 gr
- 2/3 cup + 1.1/2 Tbsp tapioca starch = 110gr
- 1 Tbsp sugar 15 gr
- 1 tsp kosher salt 5 gr
- 1 can coconut milk 400 ml
- 2/3 cup water 155 ml
- 2.1/4 cup boiling water 550 ml. You can use 2.1/2 cup = 600 ml if you like your cake softer.
Shrimp and Pork topping
- 9 oz shrimp peeled and deveined = 235 gr. Cook with 2 Tbsp water and 1/4 tsp salt. Saute with 1 tsp of veg. oil
- 4 oz ground pork = 110 gr
- 11 oz jicama = 330 gr
- 2 large shallot = 75 gr
- 2 large garlic = 15 gr
- 4 stalks scallion
- 1.1/2 Tbsp vegetable oil
- 1 tsp sugar
- 1/2 tsp kosher salt
- 1/4 tsp pepper
Coconut sauce
- 1 can coconut milk = 400 ml
- 1/4 cup water 60 ml
- 2 Tbsp tapioca starch = 16 gr. You can use 1.1/2 Tbsp if you like your sauce thinner
- 3 Tbsp sugar 45 gr
- 1/2 tsp kosher salt 2,3 gr

- 2.1/4 cup water = 550 ml
- 1 cup sugar = 220 gr
- 1/3 cup fish sauce (three crabs brand) = 80 ml
- 1/4 cup distilled white vinegar (5% acidity) = 60 ml
Nhân Tôm Thịt
- 9 oz tôm lột vỏ và rút chỉ 235 gr. Nấu tôm với 2 Mcanh nước và 1/4 mcafe muối. Rang tôm với 1 mcafe dầu ăn.
- 4 oz thịt heo xay 110 gr
- 11 oz củ sắn/củ đậu 330 gr
- 2 củ hành tím lớn 75 gr
- 2 tép tỏi lớn 15 gr
- 4 tép hành lá
- 1.1/2 Mcanh dầu ăn
- 1 mcafe đường
- 1/2 mcafe muối
- 1/4 mcafe tiêu
Nước Cốt Dừa
- 1 lon nước cốt dừa 400 ml coconut milk
- 1/4 cup nước 60 ml
- 3 Mcanh đường 45 gr
- 2 Mcanh bột năng 16 gr. Các bạn có thể dùng 1.1/2 Mcanh bột thôi nếu thích nước cốt dừa loãng hơn.
- 1/2 mcafe muối

- 1/3 cup nước mắm (ba con cua) 80 ml

Ingredients
Coconut and palm sugar syrup
- 1 lb palm sugar
- 3/4 cup water
- 1/2 tsp kosher salt
- 3-4 leave pandan
- 1 can = 400ml coconut cream
- 1 Tbsp tapioca starch
- 1/4 cup water
Rice cake, pandan mixture
- 1/4 cup = 41gr green bean starch
- 1/2 cup = 67gr rice flour
- 1 cup = 121gr tapioca starch
- 1/8 tsp kosher salt
- 1 small tub vanilla sugar
- 1/2 tsp pandan extract
- 3 drops yellow food coloring
- 4 drops green food coloring
- 1 Tbsp = 14gr sugar
- 2 cup water or pandan juice
- 1.1/2 cup boiling water
Rice Cake, white mixture
- 1/4 cup = 41gr green bean starch
- 1/2 cup = 67gr rice flour
- 1 cup = 121gr tapioca starch
- 1/8 tsp kosher salt
- 1 Tbsp = 14gr sugar
- 1 can = 400ml coconut milk
- 1.3/4 cup boiling water
Nước dừa đường thốt nốt
- 1 lb đường thốt nốt
- 1/2 tsp muối
- 3/4 cup nước
- 1 Tbsp bột năng
- 1/4 cup nước
- 1 lon = 400ml nước cốt dừa (coconut cream)
Bánh đúc màu xanh
- 1/4 cup = 41gr tinh bột đậu xanh
- 1/2 cup = 67gr bột gạo
- 1 cup = 121gr bột năng
- 1 Tbsp = 14gr đường
- 1/8 tsp muối
- 1 ống vani
- 1/2 tsp tinh dầu lá dứa
- 2 cup nước lọc hay nước lá dứa
- 1.1/2 cup nước nấu sôi
Bánh đúc màu trắng
- 1/4 cup = 41gr tinh bột đậu xanh
- 1/2 cup = 67gr bột gạo
- 1 cup = 121gr bột năng
- 1 Tbsp = 14gr đường
- 1/2 tsp muối
- 1 lon = 400ml nước cốt dừa (coconut milk)
- 1.3/4 cup nước nấu sôi
- 1 khuôn 9" không dính
- Tí dầu ăn thoa khuôn và dao cắt bánh.
