Ingredients, make 1 lb beef roll
  1. 1.072 lb = 487 gr beef chuck pot roast
  2. 1.7 oz = 48 gr pork fat
  3. 3 cloves = 10 gr fresh garlic
  4. 2 Tbsp = 16 gr cornstarch
  5. 2 tsp = 8 gr sugar
  6. 2 1/2 Tbsp = 40 gr good fish sauce,
  7. 1/2 tsp = 3 gr pepper corn lightly crack
  8. 1 hand full of fresh dills
  9. * 6 Tbsp full = 80 gr ice cold water
  10. 1/2 tsp + 1/8 tsp = 3 gr baking soda,
* Boil pork fat
  1. 1 1/2 cups = 360 ml water
  2. 1/2 tsp = 2 gr kosher salt
  3. * Banana leaves and cotton string for wrapping.
